    20 off-peak is best case scenario. I'd say it's closer to 30. With traffic, it's a lot more, not just a few more minutes. Many times it's double.

    Not that you didn't already know, that's the Galleria area and happens to be one of the busiest, if not the busiest areas/stretches of highway in all of Houston. I try to avoid that area, but your job is your job. Cons: -it's hot and humid 6 mos of the year (it gets hotter in Oklahoma, though)...

    After a year and two months in the barrel, we are emptying it on Sunday. The project obviously went much longer than we expected, but once it decided to go sour, sitting on it for longer shouldn't hurt anything. Pictures forthcoming!

    All of them are pretty easy to find (i.e. not exclusively at Spec's). I shop frequently at the Bunker Hill HEB, and they're all there. Karbach Weiss Versa seems to be my go-to beer as of late.

    Cherries (and using fruit at all) wasn't a part of the original plan...we just thought it would complement / add some complexity to where it was going. They were canned cherries, so I believe they were pasteurized. We'll pull another sample in a few weeks.

    Now at 7 months in the barrel. Taste has improved greatly...heavy oak, some funk. We added 20 lbs of sour cherries on Saturday.
